I may be interested in the fuel injection system off of it. Could it be put on a carbed motor? Or would it be better to just go with a bigger carb?

Bigger carb would be EASIER....

But the FI swap can be done...

You will need the whole harness.
New intake pump. Fuel Pressure Regulator.
Whole computer harness, Fuel rails, injectors, intake......

2nd that, FI is great, sucks when not working right, but carbs are just so annoying, have to rebuild, tune, and then replace eventually.

That is true they do, but pulling everything from one truck, then shipping it somewhere and then tryin to figure it all out can be a nightmare, even with out the shipping part its a nightmare,
Just a kit would be nice though.

Yea, id find and FI doner truck at the junkyard, and pull everything you need if you were going to go that way.
